Slow Cooker Apricot Chicken

I’ve been trying to use my slow cooker more frequently because it really is a genius invention… you put food in, go to work and it is cooked by the time you come home.  I use the same go-to recipes though and I was looking to expand my repertoire.

I headed over to Google and found this simple recipe at Mommy Hates Cooking (excellent blog name by the way!)

The ingredients list was short and sweet: chicken, apricot jam, red wine vinegar, garlic and olive oil.  As luck would have it, I had a jar of apricot jam in the pantry that I had bought for another recipe (which I flopped out on, lol) and the rest of the items are staples in my pantry.

I modified the amounts because I was using chicken breast and not drumsticks but here’s what I used:

  • 5 chicken breasts
  • ½ cup apricot jam
  • ¼ cup red wine vinegar
  • 2 tbsp. crushed garlic
  • 2 tbsp. olive oil

Add your chicken to your slow cooker… it helps with clean up if you use a bit of cooking spray first.

Next, mix the remaining ingredients in a bowl…


Smells good!

…and pour over the chicken.


So easy!

Place on low for 4 hours.



When it was done, I shredded the chicken because it was so tender that it was falling apart anyway.


5 breasts worth of shredded chicken!

While we didn’t even come close to eating all 5 breasts, the cooked chicken easily freezes for next time.
